Minestrone-style Soup


Minestrone, a soup dish that everyone loves. It is hearty, tasty, and full of vegetables, allowing everyone, even my little brother who rejects to eat most vegetables, to consume them without even noticing.

This is a family recipe passed on by my mother. It is surprisingly simple, you just need to dice the vegetables and simmer the ingredients in a pot.

Ingredients (6 servings):

  • Whole tomato (1 can)

  • Potatoes (3)

  • Carrots (2)

  • Chickpeas (1 can)

  • Minced Pork (270g)

  • Broccoli (The stem part)

  • Green pepper (1)

  • Onion (1)

  • King trumpet mushrooms (2)

  • Water (1 cup)

  • Chicken soup stock (2 cubes)

  • Creole seasoning

  • Parsley flakes

  • Basil flakes

  • Salt

  • Pepper

The ingredients does not have to be the same as the ones written above; almost all combinations will work out! (I personally like to add cabbage and bell peppers.) Furthermore, I used minced pork this time, but the meat can be any other type. For example, sausages or chicken thighs. Meatless is possible as well!

Procedure:

1. Dice all vegetables.

2. In a pot, lay a thin layer of olive oil and stir-fry the onions.

3. As the onions softens, add the meat, and then season with the creole powder.

4. Add all other diced vegetables once the meat turns brown.

5. Add the chicken stock cubes, tomato can and then water. Simmer for 5 minutes.

6. Add chickpeas, and season by salt, pepper, and parsley and basil flakes. Close the lid and simmer for another 10 minutes.

After simmering, I also added remaining vegetables such as brussels sprouts and some carrots from the day before. Once again, anything can be put in!
