Niku-miso


"Niko-Miso" can directly be translated as "meat-miso". As the name indicates, it is a stir-fry of minced meat and diced vegetables or your choice with miso. This great as a meal-prep, and can be consumed in various ways: as a "donburi" by putting it on top of rice, together with noodles, etc.

Its ingredients are also very flexible as well. The basic ingredients are:

  • Miso (Around 2 table spoons per 100g of meat)

  • Minced meat of choice

  • Vegetables of choice (onions are usually included)

  • Sweet sake for seasoning (Around 1 table spoon per 100g of meat)

For the meat and vegetables, this time I used:

  • Minced pork (500g),

  • Carrot (1),

  • Green peppers (2),

  • Onion (1),

  • Scallions (3),

  • King trumpet mushrooms (3).

I also mixed normal miso with another special type of "sweet" miso.

The procedure? Too simple that explanation is almost unnecessary! You dice the vegetables in small cubes, and stir-fry them in a pan with meat and miso.

Some tips:

  • Dice the vegetables in around the same size for all vegetables.

  • Stir-fry them with sesame oil for a better scent and savoury flavour!

  • First stir-fry the onions and then add the meat so that the meat won't stick to the pan.

The amount of miso and sweet sake can be changed according to one's preference!
