Goya Chanpuru

"Goya Chanpuru" is one of the most popular and well known stir-fry dish from Okinawa. "Goya" is bitter gourd in Japanese, and the basic ingredients for this dish are: pork, tofu, egg and bean sprouts. However this time I did not have tofu and added onions.

Chicken soup stock, salt and pepper are the only seasonings! Amount per serving? That depends on one's likes. In this case:

  • 600g of pork

  • 1 pack of bean sprouts

  • 3 bitter gourds

  • 2 eggs

  • 1 onion

  • Around 2~3 table spoons of chicken soup stock

Procedure:

1. Chop the vegetables.

2. Make scrambled eggs. Tip is to keep it a slightly not fully cooked.

3. Stir-fry the ingredients in another pan (recommended order: onions, meat, bitter gourd, and then the bean sprouts).

4. Add the chicken soup stock.

5. Once cooked well, add the scrambled eggs and stir for a minute.

So easy but tastes amazing, especially with rice!
