Knife Skills Lesson 1: Dicing

Dicing is a frequently used way of cutting, especially in dishes such as soups and fried rice.

Onions:

1. Cut off the head and bottom, peel the outside and then cut the onion into half.

2. NOT following the fibre lines, make a cut into the onion every one centemetre, leaving one side.

3. Cut the onion from the side which has the cuts. The onion should be diced!

4. For the remaining side, dice them in the normal way.

Mushrooms:

1. Slice the mushroom in thin pieces.

2. Place the sliced mushrooms slightly on top of each other, and cut them in approximately 2 to 3 cm width from right to left.

3. Arrange them closely together in a line, and cut them from right to left again. They should turn out as cubes!

4. Chop normally in order to dice them smaller.
